Today I decided that I wanted to make something warming and hearty. A stew would be nice.. so in my usual way, I decided to just go for it & make one, deciding as I went along what I was going to do. I find these recipes (if you can call them that! ) are the ones I go back to again and again, this one being no different!
Again this doesn't take long to prepare, so no excuses that there isn't enough time! I got this ready to leave bubbling away in the pan in less time than it took to listen to my favourite album of the moment by Mr & Mrs, which contains just the 10 quality tracks.
So here goes...I don't have a name for it so it's going to be, "Spicy make it up as you go along Hotch-Potch Stew... "
Ingredients: (serves 4)
2 cloves of garlic
2 small fresh chillies
3 teaspoons of paprika
a large glass of red wine
1 tables spoon of olive oil
100g of green beans
1 tin of back eyed beans
1 tin of cannellini beans
1 yellow pepper
1 red pepper
1 large onion
1 carton of freshly chopped tomatoes
5 large potatoes peeled and cut into halves
2 tea spoons of veg stock
a few drops of Tabasco
1 desert spoon of butter or alternative
salt and pepper to taste
Method:
Heat a large casserole/sauce pan, and add the olive oil, paprika, Tabasco, half the red wine, and a pinch of salt and pepper. (dependant on your taste for spice, you can reduce the chilli amount or lose the Tabasco.. but I like it hot!)
Chop the garlic, chillies, onion and pepper, and add to the hot pan, coating in the oil and wine mixture. Put the lid on and cook for about 5 minutes on a medium heat.
Add the rest of the wine, the chopped tomatoes, and the beans (all 3 types). Stir all this through. Then add the potatoes, and fill with enough water to cover all the veg. Add the stock and stir thoroughly, then as the mixture begins to boil add the butter (this helps the sauce to thicken once reduced).
Turn the heat down to minimum, and then go and do something else exciting for about 1 hr 45 mins (although you may need to pop back for a quick stir).
This is one of those dishes that benefits from slower cooking. The longer and slower you simmer, the more the flavours begin to fuse. It has a short preparation time, and no effort to let it cook down nicely, just a little patience if you are hungry!
Once it has reduced down and the sauce thickened check the spuds are done (nothing worse than a hard spud.. but if you've left it long enough they will be nicely cooked!), and then enjoy with a nice warm crusty roll! (If your sauce is too thin add a little more butter, leave to cool then bring to the boil again).
Easy, hearty, made up in an instant, and not too fattening!

The therapy of music & cooking
I never understand why people have this, "I haven't got time to cook" rant.. "I don't want to start cooking when I get home from work".. etc etc..
The first thing I do when I get home from work (especially if I have had a bad day) is start chopping veg! It's amazing how much frustration you can take out on a mushroom! What better way to divert your brain from the rubbish life brings than violently assaulting a pepper! But the best therapy is cooking with very loud music on!
My music taste lies nicely along side my cooking ideas... I hate ready made, manufactured stuff! I like locally produced food and locally produced music too..
Recently my cooking accompaniment has been a band that go by the name of "Mr & Mrs" A fantastically talented duo from Preston.
Anyone who knows me know I get excited about mandolins and fiddles etc... Ric Birtill and Chez Cullen create a great sound using a mandolin, a fiddle and an acoustic guitar. Ric's great addictive voice and their sublime lyrics are worthy of much more recognition in my humble opinion. Once in a while you hear music that sticks.. an album that you never get bored of listening to, a line that hits you with its originality, humour or emotion. They have that knack of saying things in a way you wish you thought of.. to come up with the line "spinning from the circumstantial serotonin" takes something a little special.
Their debut album - Odds and Ends.. is well worth a listen. A special album that comes along only once in a while.

Vegetarian food not just for veggies..
The first of my vegetarian recipes is now online (see below), but first, here's a little background to my passion for cooking.
I have been vegetarian for 20 years, but am not on some anti-canivore soap box. I personally just don't want to eat animals.. end of! A passion and dream of mine is to make it easy for people either thinking of going vegetarian or to cater for those having unexpected veggies come to tea! Either a member of the family or dinner guest. I want to help solve the "Oh my god they're veggie.. what do I cook?"
I have never gone down the road of meat substitutes.. apologies to Mr Quorn! I just like making wholesome easy home cooked dishes, and if I can grow some of my own to go in it all the better. I don't proclaim to make every ingredient from scratch, but I also never set eyes on a ready meal!
I will start with one of the more complicated dishes in my vegetarian lasagne, this is still easy, just takes a little time, but many of my forthcoming stuff is quick easy and tasty, giving people ideas to cater for those pesky vegetarians like us!

About us - the "Veggie campers"
I'm on the right, and I'm Ali. I'm 34 & I'm from Preston, Lancashire, England. I support Preston North End FC.
On the left and 6 inches taller (haha) I'm Jane and I'm from Blackpool. I'm 34 and unsurprisingly I support Blackpool FC.
It can get a bit competitive in our house!
We've like food, beer, wine, etc etc
We are planning big things this year with our garden. It's in the process of being cleared for raised beds, a brick bbq and hopefully, finger's crossed a Clay Oven!!!
We also own a vast array of musical instruments, including several guitars, a banjo, a mandolin, a ukulele, tambourines and the odd kazoo...
